Whole Wheat Flour
A while ago, we began using organic flour from King Arthur. We also started using white whole wheat in the pizza dough and whole wheat bread (we have since started using a seven grain mix in the bread instead) . Today in the Burlington Free Press, the front page article in the business section discusses how white whole wheat flour is different from the whole wheat flour made from red wheat, which has the darker color most people recognize as whole wheat. Amazing that there could be such recent innovation in a process that has been going on for centuries.

Please note our transition week is coming up, where we switch pizza nights from Friday to Thursday. To ease into it, we will be open both Thursday and Friday, June 8 and 9, but only Tuesday and Thursday after that. That gives us the opportunity to take advantage of long weekends during the summer, and to coordinate with the Stony Loam CSA pick up nights.

This Vermont Life

Green
After the rain this weekend, the fields around us are green and glorious. In the greenhouse, the trays of seedlings are finally more green than brown, and the greens that Dave seeded early are ready to eat. What a pleasure to have that first salad, with its fresh taste and soft, fluffy texture. A light dressing is all it takes. Luckily, there is plenty to go around, so we can offer it to you tonight.

Now if those tomatoes would hurry along, we'd be in heaven.

What, no bread?
After the vacation last week, we came home to an empty cupboard. It seems like we've never been completely out of bread, but indeed we were. After a few days of South Beach dieting, we are looking forward to fresh bread and english muffins today.
I'm watching Jamie Oliver on Martha Stewart's morning show today. He has done so much for improving the quality of school lunches in England. I know there is a program in Vermont called FEEDVT that is making an effort to connect school children and agriculture in a way that will increase awareness of good quality, fresh food for lunches. Let's get in on it, Charlotte.
